How to Make Cream Cheese Strawberry Jello Pie

There is just something about strawberry pie that screams summer! This Strawberry Jello Cream Cheese Pie is a layered cream cheese and strawberry pie that taste like cheesecake topped with a summer strawberry sauce!

This is another wonderful recipe that I found tucked away in my grandma's recipe binder. Just like the Southern Pineapple Sunshine Cake that I shared the other day, this Strawberry Jello Cream Cheese Pie is going on our "favorites" list.
In her recipe binder this was actually called "Fresh Strawberry Pie". However, this isn't really what I think of when someone says fresh strawberry pie so I decided to change the name up at bit to reflect what the pie actually is.
My toddler is crazy about strawberries and immediately fell in love with this pie after the first bite. My mom tried it and said that it reminded her of the strawberry pie that "Shoneys" use to serve although I kind of remember this pie being more like the pie version of these Strawberry Cookie Cups.
What you'll need to make Strawberry Jello Cream Cheese Pie : (amounts in recipe below)
- fresh strawberries
- Strawberry Jello
- boiling water
- cream cheese
- white sugar
- cool whip
- 9 inch deep dish pie crust, baked pastry crust or graham cracker crust
Notes when it comes to this pie:
PLEASE NOTE – this strawberry layer is more like a thick strawberry sauce layer and not like a jiggly jello layer.
Also,you probably WON'T be able to fit all of the Jello mixture in the pie dish. I don't know what kind of magic pie shells they had back in my grandma's days but I couldn't get all of the strawberry mix to pour on top without making a huge mess.
HOWEVER, save the left over strawberry jello mixture in the fridge because once the pie and mixture has chilled overnight you can scoop the extra onto the pie top before serving!

Strawberry Jello Cream Cheese Pie
Ingredients
- 2 pints fresh strawberries, cleaned and hulled
- 3 ounce box Strawberry Jello
- 1 cup boiling water
- 8 ounces cream cheese, softened
- 2 tablespoons sugar
- 8 ounces cool whip, thawed
- 9 inch deep dish pie crust, baked pastry crust or graham cracker crust
Instructions
Place 1 pint cleaned strawberries into a blender and puree until smooth.
In a medium bow, combine boiling water and strawberry Jello mix. Whisk together until Jello powder is dissolved. Stir in pureed strawberries.
Chill in the fridge for 1-2 hours until thickened BUT NOT set.
After Jello mixture has thickened, combine cream cheese and sugar in the bowl of an electric mixer. Mix on high until smooth.
Fold in 2 cups cool whip and stir until combined.
Spread cream cheese mixture into bottom of pie crust.
Pour Jello mixture over cream cheese.

Place into fridge for 6-8 hours.
slice remaining strawberries and arrange them on top.
Serve with remaining cool whip.
